Parnia Lentil Soup

  • 2 cups dried Pardina Lentils (I used Goya brand)
  • 1/2 lb chopped keilbasa (Jubilat Provisions is where I buy mine)
  • 1 onion – chopped
  • 1/2 cup celery – chopped
  • chopped kale – about 4 cups
  • 28 oz tin of diced tomatoes
  • 4 cups vegetable broth
  • 1 tbsp garam masala
  • 1/2 tbsp cumin powder
  • 1 tsp ginger
  • 1 tsp cinnamon
  • pinch of allspice or nutmeg
  • pinch of cayenne pepper

Combine all ingredients and cook on low for 8-10 hours.


Long Weekend Lentil Soup

Lentil Soup Ingredients Bought some lentils a while back to make soup and finally had the time today to put something together. I had some vegetables in the fridge and went out and purchased a few others.

1 lb lentils1 red onion
3 stalks of celery
2 parnips
Poblano pepper
4 or 5 stalks of kale
1/2 lb Kielbasa (purchased at Jubilat Provisions)
32 oz Vegetable broth
8 oz crushed tomatoes
2-3 tsp Jamaican Curry Powder
2 tsp Cumin
1 tsp sea salt

Chop and dice all the vegetables and place in bottom of slow cooker. Add lentils and vegetable broth, tomatoes, curry powder and cumin and salt. Stir to mix it up and add a little water to cover ingredients in slow cooker. I started this at noon so I put it on high until about 5pm then turned the cooker down to low.
